Broad Beans in Spiced Butter, Made with GREEN NUDGE

Broad beans fried in butter, and nothing more. A shake of FlareLine “GREEN NUDGE” at the end turns them into something to eat with a drink.

Basil and tulsi, tarragon and sage. It is a blend with green herbs in the lead, and the aroma runs in the same direction as the green note of the beans. Then the habanero heat. It rises slowly, carried on the fat of the butter, so it does not meet you at the first bite — it follows once you have chewed.

On a day when you would rather avoid heat, use Dish Symphony No.3 instead. It has peppermint and grains of paradise in it, so in place of the heat you get a coolness that runs up through the nose. Neither blend contains salt, so the seasoning is yours to decide at the end.

Ingredients (serves 2)

  • FlareLine “GREEN NUDGE”, or Dish Symphony No.3: 1/2 tsp (about 1.5 g)
  • Broad beans, podded weight: 150 g
  • Butter (unsalted): 1 tbsp
  • Salt: as needed

Preparation

  1. Dip the broad beans into boiling water for about 3 seconds, then slip off the thin skins. That brief dip makes the skins come away remarkably easily.

Method

  1. Melt the butter in a frying pan, add the broad beans and cook over a low heat. Keep the heat where the butter is just lightly foaming, and do not let it burn.
  2. Once the beans are cooked through, take the pan off the heat, add the spice and stir it through quickly.
  3. Turn out into a dish and season with salt.

One thing to watch

Add the spice after you have taken the pan off the heat. Cook it in the butter for any length of time and the green herb aroma is the first thing to go. The residual heat is enough to open it out.

If you want more heat, do not increase the quantity — serve it, then give it one more shake. Heat added after cooking has a clearer edge than heat that has been through the pan.
