Our Craft

Spice,
as a blueprint of scent.

Plants chosen at source lead every Inspice seasoning. We add no flavour enhancers and no fragrance. Our flavour perfumer blends the scent of the materials themselves, to hundredths of a gram, and builds it into one harmony.

Shake, cook, brew, dissolve. Each time the verb changes, the usual table shows a face you have not seen. Those blueprints of scent are drawn one at a time, in a small studio in Kanazawa.

Turning heatwarmthas

Five blends in which habanero — the emblem of extreme heat — does not lead, but works as a quiet warmth drawing out aroma and savour. Frying, simmering, pickling: a spark of character, lit on the dish.
