Salmon Tartare

Salmon Tartare

Salmon tartare is easy and delicious — you only chop and mix. Try adding Dish to your usual salmon tartare. It is the kind of thing you cannot stop eating. Good on its own, good piled onto a baguette, and excellent alongside a drink.

Any Dish should work, but for this recipe we used Symphony No.1. Do try a few and see.

Ingredients (serves 2 to 3)

  • Sashimi-grade salmon: 100g
  • Onion: 1/3
  • Avocado: 1/2
  • Dish (flavour of your choice): 1/2 tsp
  • Mayonnaise: 2 tbsp
  • Lemon juice: 1 tbsp
  • Soy sauce: 1 tsp

*If you want to make a larger batch, simply double or triple the amounts above.


    Method

    1. Lightly salt the salmon and leave for 10 minutes, then pat dry with kitchen paper and chop finely.
      Salting the fish draws out a little moisture, which gives a better result.
    2. Finely chop the onion: 1/3 and avocado: 1/2.
    3. Put mayonnaise: 2 tbsp, lemon juice: 1 tbsp, soy sauce: 1 tsp and Dish (flavour of your choice): 1/2 tsp in a bowl and mix together.
    4. Add all the ingredients to the bowl, mix together, and it is done.

    Little tricks to make it even better

    · After plating, scorch the surface lightly with a kitchen blowtorch — the flavour becomes something else.

    · A little basil or similar adds welcome colour.
