When you are left with small amounts of several vegetables, dice them all and turn them into this chunky Southeast Asian-style salad.

Red onion, cucumber, tomato, celery — anything you can eat raw works. But because we want a really vivid Southeast Asian flavour, coriander is the one thing we never leave out.

For the seasoning: lime juice (or lemon), salt, olive oil and Tabasco. Plus the Dish of your choice.

For this recipe we combined two flavours, Dish Symphony No.1 and Dish Symphony No.2. It is very good. Which Dish you use is entirely up to your mood.

Ingredients

  • Coriander
  • ☆Vegetables (anything you can eat raw; the list below is an example)
    • Red onion
    • Cucumber
    • Tomato
    • Celery
    • Avocado
    • Pickles (cornichons (baby gherkins) and the like)
  • ☆Seasonings
    • Lime juice (or lemon): to taste
    • Salt: to taste
    • Olive oil: to taste
    • Tabasco: to taste
    • Dish (flavour of your choice): to taste

Preparation

  • Dice all the vegetables.
  • Finely chop the coriander.

Method

  1. Arrange the vegetables and coriander in a serving bowl.
  2. Pour over the ☆seasonings and toss together.
  3. Taste and adjust the seasoning.

Tips for the best result

The amount of seasoning you need changes with the amount of vegetables you use, so add each one a little at a time until it tastes right. That said, it is hard to cook without a guide, so use the amounts below as a starting point.

  • Lime juice (or lemon): 1 tbsp
  • Salt: 2 pinches
  • Olive oil: 2 tbsp
  • Tabasco: 1 tsp
  • Dish (flavour of your choice): 1 tsp
