Steamed Salt Pork, Made in a Seiro Bamboo Steamer

Steamed salt pork: a way of cooking lean, light pork that uses no oil at all.
Steaming gives it a dense, springy texture,
and concentrates the savoury depth. This recipe uses Dish 3, which takes away any heaviness in the meat and brings that savoury quality further forward. (We have not tried it, but Dish 1 should work well here too.)
Fill the spare space in the steamer with whatever vegetables you like and serve them warm alongside.
We also made a miso sauce to go with the salt pork, and it is excellent. Use it on the meat, the vegetables and the rice.
Ingredients (serves 4)
- Dish (Symphony No.1): about one heaped small spoonful
- Pork belly, in one piece: 400g (pork belly is our recommendation, though we used shoulder loin for this recipe. Take your pick.)
- Salt: the weight of the meat in grams x 0.8% (use a calculator)
- Miso sauce (just mix the ingredients below together)
- Miso: 1 tbsp
- Sugar: 1 tsp
- Vinegar: 1 tsp
- Dish 3: a pinch

Preparation
- Pierce the pork all over with a fork, rub in the salt and the Dish, and rest it for about 30 minutes if you can.
Method
- Bring water to the boil in a pan.
- Put the pork, the vegetables and anything else you are cooking into the seiro (bamboo steamer).
- Once the water is boiling, set the seiro on top and steam for 30 minutes.
- When it is done, cut it into pieces about 5cm wide and serve with the miso sauce.

Uses 2 of them together. No measuring, and dispatched in one to two business days.
This is the one to rub into the pork. The toasty depth of paprika and the bite of black pepper keep fatty pork from feeling heavy even when steamed. Salt-free, so it never upsets your salt calculation of 0.8% of the meat's weight.
A pinch into the finishing miso sauce. The five-spice aroma and the light tingle of Sichuan pepper give the sweetness of miso a sharper outline, lifting the mild flavor of steamed pork.
