Shiitake Steak: Light, and Still Satisfying

Mushrooms are light and full of nutrition, and worth working into everyday meals. On a day when you are walking through the market and spot thick, handsome shiitake, how about a dinner with shiitake steak at the centre of it?

The savoury depth and aroma of the shiitake, lifted by the seasoning blend Dish, make for a natural flavour that is quietly remarkable.

This recipe uses a toaster oven so that it is as easy as possible to make. A conventional oven works too, as does sauteing them in a frying pan.

Shiitake Steak: Light, and Still Satisfying


Ingredients (serves 4)

  • Shiitake mushrooms: 4
  • Salt: about a pinch per mushroom
  • Dish: about a pinch per mushroom
  • Butter: about 1 tsp per mushroom
  • To eat
    • Ponzu (citrus-soy sauce): to taste
    • Or soy sauce: to taste


    Preparation

    • Cut the stems off the shiitake and score the caps in a lattice pattern at 5mm intervals.

    Method

    1. Place a pinch of salt, then about 1 tsp of butter, then a pinch of Dish, in that order, on top of each shiitake.

    2. Set the shiitake on foil and cook in the toaster oven for 5 minutes.

      The cooking time varies a little with the size of the mushrooms. Cook for 5 minutes first, check, and give them longer if they are not there yet.


    3. Arrange on a plate and serve. (Add soy sauce or ponzu to taste.)

      The liquid that seeps out of the shiitake is full of savoury flavour. If any has collected in the foil, pour every drop of it back over the mushrooms before eating.
