Chunky Chicken Drumette and Corn Curry, Made with SN4
The corn goes in only for the last 10 minutes of simmering. Its sweetness stays inside the kernels and layers with the dates and cherries of SN4. A summer southern-island curry, with the richness from the drumette bones supporting it from below.

Bacon and cabbage southern-island curry, made with SN4
An SN4 southern-island curry made with slab bacon and cabbage. The cabbage goes in core first, and the dish finishes while the bite is still there. The bacon brings its own salt, so the salt that meets the onion is dropped to 1/2 teaspoon.

Southern-Island Keema Curry with Okra and Summer Vegetables, Made with SN4
It calls itself a curry, but the first item on SN4's ingredient list is not a spice — it is dates. A summer keema built on that sweet aroma, with the fat of ground meat and the bitterness of green peppers. The okra goes in only for the last 3 minutes.

Chicken Breast and Bell Pepper Island Curry for Summer, made with SN4
A spice curry in which chicken breast, which dries out easily, is marinated in yoghurt for 30 minutes and then simmered for only 10. Red and yellow bell peppers against the sweet fruit aroma of SN4. Serves 4, about 70 minutes.
