Baked Cheese Vegetable Mille-feuille Spice Curry, made with SN1

SPICE CURRY SPICE PACK (Spice Curry Spice Pack Symphony No.1 / SN1)
— a baked cheese vegetable mille-feuille spice curry.

Seasonal vegetables layered in an ovenproof dish and baked with cheese and olive oil. It is simple to make, light, and looks generous when you cut into it. The recipe here is a next-day one: make it on the day when a little spice curry is left in the pan and there is not quite enough for a plate.

It could not be simpler. Stir the leftover spice curry through the baked cheese and vegetables, as though it were a secret sauce, and you have a rich, fragrant dish 🍛

Ingredients (serves 4)

  • Leftover spice curry made with SN1 (it does not have to be SN1)
  • Courgette
  • Aubergine
  • Salt
  • Olive oil
  • Cheese
  • Butter: about 10g
  • (Plus any other vegetables or mushrooms you like)

Preparation

  • Cut the courgette and the aubergine into rounds

Method

  1. Pour olive oil into a frying pan and sauté the courgette and aubergine with salt.

  2. When they start to colour, add a small amount of the spice curry and fry, turning everything to coat.
    (You will use the spice curry again later, so keep some back.)

  3. Once everything is cooked through, take the pan off the heat.

  4. Butter the base and sides of an ovenproof bowl with the butter.

  5. Layer the sautéed vegetables loosely, like a mille-feuille.

  6. Spread the spice curry over the top.

  7. Scatter the cheese over that and drizzle over some olive oil.

  8. Bake for about 15 minutes in an oven set to 200°C, without preheating, keeping an eye on it. (It is ready when the cheese has taken on a good colour.)

And that is it.

The vegetables and other ingredients are entirely up to you, so it is worth layering whatever is in season.

In spring and summer: bamboo shoots, wild greens, green vegetables.

In autumn and winter: mushrooms, root vegetables and potatoes, or a fish such as salmon.
