Tuna Carpaccio with Tomato Spice Dressing

A summer carpaccio like a red sun. A salted dressing of tomato and spice brings out the savoury depth of the tuna. For this recipe we recommend Dish No.1.
It is good made fresh, but the flavour after a night in the fridge is excellent too.
Ingredients (serves 4)
- Tuna (sashimi grade): 200g
- Onion: 1/8
- ★Dressing
- Tomato: 1 (if using cherry tomatoes, about 150g)
- Garlic: 1 clove
- Dish Symphony No.1: 1/2 tsp
- Salt: 1/2 tsp
- Olive oil: 1 tbsp
Preparation
- Slice the “onion” thinly.
- Chop the “garlic” very finely.
- Cut the “tomato” into roughly 1cm cubes.
Method
- Cut the tuna into thin diagonal slices and arrange on a plate.
- Pile the sliced onion on top of the tuna.
- Mix all the ★dressing ingredients together. Taste, and if it seems weak, adjust with salt.
- Pour over the dressing and it is done.
If you like, a splash of soy sauce at the end is good too.
