Gulyás (Hungarian Goulash Soup)

Gulyás is regarded by Hungarians as a national dish: a soup of meat and vegetables simmered with paprika. We always thought it would be good made with Dish Symphony No.1, which has a generous amount of paprika powder in the blend. And then the chance came.

The result is delicious. It is a flavour we would genuinely like everyone to cook and taste.

The ingredients are easy to find for an ordinary meal, and the only seasonings are vinegar, salt, butter and Dish 1. Within a light, plain-tasting soup there is real depth of flavour. “Shall we just knock up a gulyás today?” — you can almost hear it being said.

For this recipe we used Vienna sausages for the meat. Feel free to use beef or pork instead.

Gulyás (Hungarian Goulash Soup)

    Ingredients (serves 4)

    • Vienna sausages: 6
    • Onion: 1
    • Fresh tomato: 1
    • Green pepper: 1
    • Carrot: 1/2
    • Garlic: 1 clove
    • ★Seasonings
      • Vinegar: 1 tbsp
      • Salt: 2 tsp
      • Butter: 10g
      • Dish 1: 2 tsp
    • Water: 400ml
    • Oil: 1 tbsp (rice bran oil, light sesame oil or whatever you prefer)

    Preparation

    • Chop all the vegetables finely.
    • Slice the Vienna sausages into rounds about 1cm thick.

      Method

      1. Pour oil: 1 tbsp into a pan and fry the finely chopped garlic over medium heat.
      2. When the garlic becomes fragrant, add the onion, carrot and salt: 1 tsp, and fry until translucent.
      3. Add the green pepper, tomato and Vienna sausages, fry for about 1 minute, then add Dish 1: 2 tsp and stir it through, as though cooking the spices in the heat.
      4. Add water: 400ml, salt: 1 tsp, vinegar: 1 tbsp and butter: 10g, stir together, and once it comes to the boil, put the lid on and simmer over low heat for 10 minutes.
      5. Taste, adjust with salt, and it is done. If you would like some heat, add chilli or ground chilli to taste before eating.
