Sausage and Komatsuna Soup Curry, made with SN3
A soup curry made with Symphony No.3, with sausages and komatsuna. Nothing thickens into a roux — the sauce stays thin, close to a soup. The komatsuna is never simmered in; it goes on top of the sauce at the end, under a lid, for five minutes. The sausages release salt of their own, so the aromatics get half the usual amount.

Herb Curry with Tofu and Chickpeas, Made with SN3
An herb curry made with nothing but tofu and chickpeas — no meat, no fish. The aromatic vegetables — onion, carrot and celery — are taken to amber, and the herbs of SN3 rise from that foundation.

Mushroom and Minced Chicken Herb Curry, made with SN3
A herb curry of mushrooms and minced chicken, made with Spice Curry Symphony No.3. The shimeji, maitake and king oyster mushrooms go in after the aromatics and cook for five minutes to drive off their water, so the sauce does not thin as it simmers.

Herb Curry with Chicken Breast and Eggplant, Made with SN3
The chicken breast goes in for only the last five minutes. An SN3 herb curry that finishes tender, never dry. The fat it lacks is supplied by eggplant that has drunk up the oil.

Chicken Curry, made with SN3
This is the SN3 version of the Basic Chicken Curry made with SN1. We wondered how a chicken curry would taste made with SN3, the herbal blend built on the idea of a bouquet garni you can eat. It was very good, so here is the recipe.
