The Cocoa

High cacao,

Pure cocoa and cacao nibs. Over them, the sweetness of tonka bean, the faint heat of Basque chilli, the finish of cassia — nine spices and rock salt, quietly drawing out the edge of the cacao.

No sugar is added. Dense as espresso, faintly bitter. Sweeten to taste with red sugar or honey. Take it as a drink, or fold it into baking and cooking.

Why The Cocoa

Three ways to take it.

From a dense drink to a quiet note in baking and cooking.

Drink

As a dense drink

Dissolve a tablespoon in a little hot water, pour in about 180ml of milk and warm it. A cup as dense as espresso.

Bake

In baking

Swap it straight in for the cocoa in brownies or cookies. The spice adds depth, and the result turns grown-up and bitter-edged.

Cook

As a note in cooking

A teaspoon in a curry or a braise. It adds body and depth without announcing itself.

How to Make / Three minutes, one mug

Three steps, and that is all.

The cup we serve in the Kanazawa shop, made in a mug in the microwave. Sweeten as you like; without sugar it drinks like a bitter chocolate drink.

Dissolve

A tablespoon in the cup. Add sugar if you like (about 8g) and dissolve in a very small amount of hot water.

Pour

Add about 180ml of milk and stir. Soy or oat milk works too.

Heat

Warm it in the microwave and it is done (about 1 min 40 s at 500W, 1 min 10 s at 600W). For iced, use ice and cold milk.

Pure cocoa from De Zaan in the Netherlands, cacao nibs from Callebaut in Belgium. Nine spices to draw out their edge, and a pinch of rock salt. Listed in order of weight. Tap a name to read its part.

Source: the ingredient list, in order of weight. The ground spices rest with the pure cocoa for at least 48 hours to let the aroma settle, then are ground fine once more.
