Why spices suit high-cacao | Read through around 600 aroma molecules

Pairing spices with high-cacao is not an eccentric whim. Cacao holds around 600 aroma molecules, and every one of them has a partner that amplifies it. The nine spices and the rock salt in the cocoa, “high-cacao and spice cocoa”, are chosen as exactly those partners.

Cacao’s bitterness is not one single taste

Cacao has around 600 flavour compounds. The proportions shift with growing region, variety and processing. At the centre sits a molecule called isovaleraldehyde, which carries both the character of chocolate and a hint of peach. The bitterness comes from caffeine and theobromine, and roasting turns it into pyrazines, the toasted fragrance of roasted nuts.

So a cup of high-cacao has at least four faces: the bitterness of roasted nuts, the sweet richness of chocolate, the fruitiness of esters, and the honeyed sweetness of ketones. Read the cocoa’s blend at the molecular level and the nine spices are placed across these four.

Woody — the smallest amount that will not disappear

The bitterness of pyrazines, paired with spices that carry woody aromas, leans towards “toasted” rather than “burnt”. Cumin and black pepper (Tellicherry) take charge here.

Cumin sits close to the very end of the ingredient list. Look across all 27 Inspice products and there is no smaller proportion than this one. Even so, the molecule cuminaldehyde exists in this spice alone. Take it out and that aroma vanishes from the cup completely. A trace amount is not the same as “as good as absent”; it is a construction of “the smallest amount that will not disappear”.

Sweet — coumarin from tonka bean stands in for vanilla

The chocolate character of isovaleraldehyde stretches out when paired with sweet-smelling spices. Tonka bean is placed here. On the ingredient list it comes third, right behind the cacao.

Around 80% of a tonka seed is coumarin; the material is close to a block of coumarin itself. Its scent resembles the leaf wrapped around sakuramochi (a cherry-leaf rice cake), sweet at a depth below vanilla. Count the compounds in the cocoa and coumarin pushes into the top ranks. Not one grain of vanilla is used, yet the sense of a vanilla-like sweetness is set in place. And the same ingredient list carries cassia, which holds coumarin secondarily. Two bridges of sweetness are quietly built.

Fruity — the Basque chilli, only as a suggestion

Cacao’s esters rise when paired with citrus and floral aromas. Coriander takes that role, along with the Espelette variety, listed in the ingredients as “chilli (Basque)”. It is a protected variety from the French Basque country, known for a red close to orange and for its fruitiness, with mild heat.

What goes in is a trace. It is not there to add heat. It is a single drop that sets down only the suggestion of warmth, to wake the fruitiness of the cacao.

Honeyed — sweet paprika, exactly as the textbook says

What lifts the honeyed sweetness of the ketones is cassia, allspice and paprika. The Inspice flavour designer chooses sweet paprika as cacao’s partner, because it strengthens the sweetness and brings an earthy note at the same time.

The paprika in the cocoa is also a trace. Even so, acetoin and ethyl acetate, particular to paprika, are brought into this cup by paprika alone. One more thing: black pepper and allspice are set at exactly the same amount as each other. The two share four compounds — pinene, phellandrene, myrcene and linalool — the smallest unit of overlap anywhere in the Inspice range.

Rock salt takes charge of the outline, not the aroma

The cocoa also contains rock salt. Rock salt is sodium chloride and trace minerals; it carries almost no aroma molecules. So it never appears in the aroma calculations. It is there all the same, to sharpen the outline of the sweetness and the bitterness. In this cocoa, which uses no sugar, rock salt joins the design from the side of taste.

What it means for a trace to become design

The foundation of the cup is pure cocoa and cacao nibs. Nine spices and rock salt go in on top, and several of those lined up towards the bottom of the ingredient list are present in amounts that would normally be written off as margin of error.
