Shiitake Sauteed in a Cheese Sauce

If you have shiitake, grated cheese and Dish Symphony No.2 in the house, how about this?
Melt some butter and add a shake of Dish. Make a sauce with milk and grated cheese, add the mushrooms, and steam for about 5 minutes. That is all it takes.
(We used Tom Tom shiitake here, a variety whose stems can be eaten as well. They are very good.)

Ingredients (serves 2)
- Dish (Symphony No.2): about one heaped small spoonful
- Shiitake mushrooms: as many as you like
- Milk: 50ml
- Butter: 20g
- Grated hard cheese: 20g
- Salt: a little
Preparation
- Remove the stems from the shiitake.
Method
- Set a frying pan over low heat and melt 20g of butter.
- Add about one heaped small spoonful of Dish (Symphony No.2) and stir it into the butter.
- Add 50ml of milk and warm it through.
- Hold your hand over the pan, and when you can feel the warmth, add 20g of grated hard cheese and melt it in.
- Add the shiitake, turn the heat to medium, put the lid on and cook for 5 minutes.
- Sprinkle over a little salt, stir everything together, and it is ready. Add a little extra Dish if you like.
