Hot Chai with CHAInstant

No pan, no strainer. A mug and a microwave give you a proper cup of chai.
There is one point of order to hold to: pour the hot water first and wait two minutes. Tea leaves open in water at the boil. Add milk straight away and heat it, and neither the aroma nor the astringency comes out in full. Those two minutes decide most of the flavour.
Time required: about 4 minutes
Ingredients (1 cup, about 220ml)
- CHAInstant, 1 unit (the tea bag plus the powder in the sachet)
- Boiling water 90ml
- Milk 130ml (soy or oat milk also work)
Method
- Put the tea bag in a mug. Add all the powder left in the sachet as well.
- Pour in 90ml of water brought to the boil and wait 2 minutes.
- Pour in 130ml of milk.
- Heat in the microwave at 600W for 1 minute 20 seconds.
- Stir well. Done. Leave the tea bag in as you drink.
One thing to watch
Do not take the tea bag out. It keeps releasing aroma while you drink. Everything, the tea bag included, is made from plant-derived materials.
On days when boiling a kettle feels like too much, you can instead add 90ml of water, heat it in the microwave for 2 minutes, and let it steep for 2 minutes as it stands. That saves preparing hot water separately.
The heating after the milk goes in can boil over, so allow room in the mug. If your microwave is not 600W, start short so it does not overheat.
If you want it iced
Rather than pouring it over ice, chill the finished chai in the fridge as it is. Over ice, both the aroma and the sweetness thin out. Make it the night before and it will be at just the right temperature in the morning.
